last wednesday in the ny times ‘dining in’ section, mark bittman ran an article ‘101 simple meals ready in 10 minutes or less’. now i know thatever so many of usout there wants the shortcut, the easiest method, the (if you will) quick fix. ikind ofsit on the fence on this one, acutely aware howeverything has its place. but what i loved about bittman’s take on this was that in all its immediacy, it was still all real food. it was still (if i may) gourmet, albeit down home style. and for someone like me, it sparked ideas. introduced some new combinations that i’d not thought of before. hell, it was downright inspiring.
33Saut 10 whole peeled garlic cloves in olive oil. Meanwhile, grate Pecorino, grind lots of black pepper, chop parsley and cook pasta. Toss all together, along with crushed dried chili flakes and salt.
mark, i am a fan. i love you man. and i can guarantee it marky baby – if you knew me, you’d love me too.
chew on that big boy.

Mmm, so delicious. I had a pasta like that in a lady’s house in Taormina, Sicily. She just had a hand-written sign outside her house, offering up lunch. We sat at one of 3 tables on her sun porch, and she brought us a little marinated mozzeralla appetizer, then a pasta just like this one. There was no menu, she just served whatever she was cooking that day. And we drank some homemade chianti. Oh man what a nice meal, with a view of a little lemon grove.

I think what Mr. Bittman’s fabulous list did was remind us all how easy it is to throw something good together quickly in the kitchen. An important lesson, especially in the summer, when the heat and tons of beckoning activities make the kitchen the last place we want to be. Your take on #33 looks beautiful and delicious!
